
Ingredients:
6 bones/skinless chicken breast (in zip lock bag, pound thin)
24 thin slices of Prosciutto (Italian ham)
2 x 7oz. containers Four Winds Feta Spread/Dip-Garlic or Pesto exceptional!
Extra Virgin Olive oil for basting
Directions
- On a cutting board place 4 slices Prosciutto overlapping to create a rectangular bed
- Trim each chicken breast to fit on the Prosciutto.
- Place a chicken breast on each of 6 prosciutto beds.
- Spread 1/3 container of Four Winds Fine Foods Feta Spread/Dip, of your choice, onto chicken.
- Roll the Prosciutto over the chicken and feta spread/dip having the seam on the bottom and tuck the sides of the Prosciutto under.
- Place the rolls into a 9 X 13 backing dish and brush each roll lightly with EVOO
- Bake 45 min @ 350 degrees or until chicken is done.
