Chicken Gordon Bleu


6 bones/skinless chicken breast (in zip lock bag, pound thin)
24 thin slices of Prosciutto (Italian ham)
2 x 7oz. containers Four Winds Feta Spread/Dip-Garlic or Pesto exceptional!
Extra Virgin Olive oil for basting


  1. On a cutting board place 4 slices Prosciutto overlapping to create a rectangular bed
  2. Trim each chicken breast to fit on the Prosciutto.
  3. Place a chicken breast on each of 6 prosciutto beds.
  4. Spread 1/3 container of Four Winds Fine Foods Feta Spread/Dip, of your choice, onto chicken.
  5. Roll the Prosciutto over the chicken and feta spread/dip having the seam on the bottom and tuck the sides of the Prosciutto under.
  6. Place the rolls into a 9 X 13 backing dish and brush each roll lightly with EVOO
  7. Bake 45 min @ 350 degrees or until chicken is done.
